Choose your favorites from the following or add you own favorite veggies:
1-2 Zucchini or Yellow Squash
1 medium sized Sweet Onion
1-2 Bell peppers
1-2 Banana peppers
5-6oz Snow peas
5-6oz Asparagus
5-6oz Baby Portobello Mushrooms
5-6oz Cherry Tomatoes
Marinade ingredients:
1 cup Olive Oil
1/2 cup Red Wine Vinegar
1/2 cup fresh Lemon Juice
1 Tbsp Granulated Garlic
1 Tbsp Basil
1 Tbsp Oregano
1 Tbsp Rosemary
1 Tbsp Thyme
1 tsp Red Pepper Flake
1 tsp Salt
1 tsp Black Pepper
Give all vegetables a course chop and place in a large sealable bag
In a mixing bowl or measuring cup, add oil, vinegar, and all seasonings. Whisk well.
Add dressing mixture above to vegetables, seal and toss to allow seasoning to thoroughly coat the veggies.
Let veggies marinade for 1-2hrs tossing periodically.
Prep grill for direct cooking over medium heat (375-400deg)
Lightly oil a grilling wok and let it warm to temperature inside the grill
Add veggies to the wok and grill for 10-12min tossing 2-3 times during cooking
Veggies are ready when they’ve developed a nice char and/or they’ve reached the desired tenderness.
