1-dozen Jalapeños
1-1/2 cups Goat Cheese
3 strips Pepper Bacon
Cook bacon strips using preferred method until fully crisp.
Set bacon on paper towels and let dry.
Clean & de-seed jalapeños.
Slice jalapeños in half from top to bottom to create to jalapeño “boats”.
Crumble bacon into small pieces (approximately 1/4”x1/4” or smaller).
In a small mixing bowl, combine goat cheese and bacon pieces. Whip with a spoon into a smooth consistency.
Spoon the cheese & bacon mixture into each jalapeño boat as pictured.
Prep grill for direct heat over medium high heat (approx 425deg)
Grill jalapeños (cheese filling side up) for approximately 8-10min or until jalapeños develop a nice char. Jalapenos should still be firm enough to hold.
